Last year, we made a trip to San Diego to visit my family and enjoy the San Diego sunshine. We stayed at a resort in Carslbad, CA, a city just north of San Diego county on the coast. We were lucky enough to hang out poolside with old friends and family at a beautiful resort, for four glorious days. I’m an admitted wine enthusiast and usually drink wine but sometimes I want to enjoy a light refreshing cocktail, especially when I’m poolside. I’ve been gluten free for about 7 years since I was diagnosed with an intolerance to wheat and gluten, so I’m always looking for a cocktail option that is gluten free and low calorie.
On our trip, I was introduced to The Paloma. I learned that this is Mexico’s pride and joy that usually takes a back seat to the Margarita in the states, but is very popular in Mexico. The Paloma is usually made with tequila but can also be made with vodka if you aren’t a fan of tequila. I tried it with both and it’s great either way. I did some research and found that there are a TON of variations on this cocktail out there. This article on Alcademics.com gives over 20 variations on the classic drink. On my return home, I copied the resort’s version with a few tweaks that makes it easy to make and lower in calorie. Here is the version I’ve been sipping at home. I hope you enjoy!
